Father’s Day brunch: Say I love you with scrambled eggs and chorizo!

Ashridge House Events and Hospitality Director David Willmin loves a weekend fry up so we asked him to share his favourite recipe for a Father’s Day brunch. David share’s this delicious eggs and chorizo recipe which is perfect served on toasted sourdough. See our Stories page for the recipe to make your own sourdough, otherwise shop bought is good too. If you are a vegetarian, David recommends swapping the chorizo for mushrooms or tomatoes. Wishing all dad’s a very Happy Father’s Day, thank you for being there for us!


Serves 2


Sourdough loaf 

6 eggs

Chorizo sausage 

1 tbsp olive oil

Sea salt

Black pepper


Chives, chilli flakes or coriander


Step 1

Roughly dice the chorizo. Heat the olive oil in a frying pan over medium heat until the oil is hot, then add the chopped chorizo.

Fry for a minute or two until the chorizo is cooked through. 

Step 2

Break the eggs into a bowl and lightly whisk, season with salt and pepper then cut the sourdough bread into chunky slices and toast.

Step 3

Add the beaten eggs to the frying pan with the chorizo and stir on a low heat with a wooden spoon to mix the ingredients.

When the eggs are cooked through remove from the heat 

Step 4

 Place the freshly toasted sourdough onto your plates and top with the scrambled eggs and chorizo.

Season with more ground black pepper if required and garnish with chopped chives, chilli flakes or a little coriander.

Serve with an espresso coffee and freshly squeezed orange juice!
